Pumpkin Pie Oatmeal Ingredients
- milk
- diced pumpkin
- oats
- maple syrup or honey
- pumpkin pie spice
- vanilla extract
- salt
How to Make Pumpkin Pie Oatmeal
- In a small saucepan over medium heat combine the milk and pumpkin. Cook for 15 minutes or until the pumpkin is fork tender.
- With the help of an immersion blender process until combined.
- Add the oats, maple syrup, pumpkin pie spice, vanilla extract and salt.
- Continue cooking for 8 minutes or until thickened.
- Remove from heat and serve with granola, yogurt or any topping you like.

- You can make these gluten free by using gluten free rolled oats.
- Dice the pumpkin in smaller pieces so it cooks faster.
- I enjoy my oatmeal THICK so I cooked them for 8 minutes stirring constantly. However, you can cook them for a little bit less time if you want your oatmeal more runny.
